  • 2 salmon fillets
  • 2 cups baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1 tbsp fresh parsley, chopped
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tsp lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss halved baby potatoes with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. On another baking sheet, place trimmed asparagus, drizzle with olive oil, season, and top with shredded cheese. Bake alongside the potatoes for the last 10 minutes until the cheese is bubbly.
  3. Season salmon fillets with paprika, garlic powder, salt, and pepper. Heat olive oil in a grill pan over medium-high heat and cook each fillet for about 4-5 minutes per side until golden.
  4. Serve salmon with roasted garlic potatoes and cheesy asparagus on each plate.
