Ingredients

  • 45 slices Fresh ginger, peeled and thinly sliced
  • 2 cloves Garlic, minced
  • 2 tablespoons Soy sauce
  • 1 can (400 mL) Coconut milk
  • 1 tablespoon Brown sugar
  • 2 tablespoons Fresh lime juice
  • Salt and pepper, to taste
  • 1 kg Chicken, (dark meat preferred, thighs or drumsticks, boneless and cut into chunks)
  • Skewers, (if using wooden, soak in water for at least 30 minutes)

Instructions

  1. In a mixing bowl, combine ginger, garlic, soy sauce, coconut milk, brown sugar, lime juice, salt, and pepper. Whisk until blended.
  2. Add chicken chunks to the marinade and coat well. Cover with plastic wrap and refrigerate for 30 minutes to 4 hours.
  3. Thread marinated chicken onto skewers (soak wooden skewers in water if using).
  4. Preheat grill or stovetop grill pan over medium-high heat and lightly oil grates.
  5. Grill skewers for 4-5 minutes on each side until charred and cooked through.
  6. Remove from heat and squeeze fresh lime juice over skewers before serving.
