  • 1/3 cup (80 grams) sour cream
  • 1 tablespoon high-heat oil
  • 2 pounds beef brisket or boneless chuck roast, cut into 1-inch pieces
  • 8 ounces button or baby bella mushrooms, cleaned and quartered
  • 4 medium to large carrots, peeled and sliced on the diagonal
  • 1 large onion, diced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 2 tablespoons fresh thyme leaves
  • 3 garlic cloves, minced
  • 1½ teaspoons (5 grams) coarse kosher salt
  • 1 teaspoon ground black pepper
  • 2 cups beef broth
  • 1 tablespoon turbinado or brown sugar

Instructions

  1. Prepare the pie crust by mixing flour and cold butter until crumbly; add sour cream to form dough. Chill for at least 30 minutes.
  2. Brown beef in a heated skillet and remove from the pan.
  3. Sauté onions, mushrooms, carrots, garlic, thyme, salt, and pepper until softened.
  4. Stir in flour and tomato paste; add beef broth and brown sugar to create the filling sauce.
  5. Return beef to the skillet and let simmer for about 20 minutes until thickened.
  6. Preheat oven to 375°F (190°C) and assemble the pot pie with rolled-out dough and filling.
  7. Bake for 30-35 minutes until the crust is golden brown.
