Ingredients

Scale
  • 3 cups all-purpose flour
  • 2 tablespoons powdered sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 20 tablespoons unsalted butter, cold and cubed
  • ½ cup milk (or water)
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1/3 cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg, freshly grated
  • Pinch cloves
  • 1 (15 ounce) can pumpkin puree
  • 1½ cups powdered sugar
  • 23 tablespoons milk
  • 1 ½ teaspoons vanilla extract

Instructions

  1. In a food processor, combine all-purpose flour, powdered sugar, ground cinnamon, and salt. Pulse until blended.
  2. Add cold butter cubes and pulse until mixture resembles coarse crumbs.
  3. Gradually add milk while pulsing until dough begins to form.
  4. Divide dough into two disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. In a mixing bowl, combine pumpkin puree, light brown sugar, ground cinnamon, nutmeg, and cloves. Mix until smooth and well combined.
  6. Preheat your oven to 375°F (190°C).
  7. On a floured surface, roll out one disk of dough to about ¼ inch thick.
  8. Using a round cutter or glass, cut out circles about 4 inches in diameter.
  9. Place about 1 tablespoon of pumpkin filling in the center of each dough circle.
  10. Fold the dough over to create a half-moon shape. Press edges together firmly and crimp with a fork to seal.
  11. Line a baking sheet with parchment paper and place the stuffed pasties on it.
  12. Bake in preheated oven for about 25 minutes or until golden brown.
  13. In another bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  14. Drizzle glaze over cooled pasties before serving.
