  • 1/3 cup ketchup
  • 1/3 cup dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1 1/2 lbs boneless, skinless chicken breast (cubed)
  • 3 cups fresh pineapple (cubed)
  • 1 large red onion (diced)
  • 1 1/2 large green peppers (diced)

Instructions

  1. In a mixing bowl, whisk together ketchup, brown sugar, soy sauce, pineapple juice, olive oil, rice vinegar, garlic, and ginger.
  2. Marinate cubed chicken in half of the marinade stored in a resealable bag for at least one hour.
  3. Preheat grill to medium heat (400°F). Prepare vegetables by tossing them with remaining olive oil and seasoning.
  4. Thread marinated chicken, pineapple, and vegetables onto soaked skewers.
  5. Grill kebabs for about 10 minutes total, brushing with reserved marinade halfway through until the chicken reaches an internal temperature of 165°F.
