- 1 cup baby cucumbers, sliced

- 1 tbsp maple syrup
- 1 tbsp apple vinegar
- 1 tbsp tomato paste
- 2 tbsp pineapple juice
- 1 tbsp sriracha
- 1 tbsp sesame oil
- 1 cup cooked edamame beans
- 1 tbsp toasted sesame seeds
- 2 tbsp light mayo
Instructions
- Cook jasmine rice per package instructions; fluff and set aside.
- In a frying pan over medium heat, add sesame oil. Sauté grated garlic and ginger until fragrant.
- Add chicken thighs and cook until browned on both sides and fully cooked (about 6-7 minutes per side). Let rest before slicing.
- In a mixing bowl, combine soy sauce, maple syrup, apple vinegar, tomato paste, pineapple juice, sriracha, and sesame oil; whisk well.
- Assemble bowls starting with jasmine rice as the base; layer with sliced chicken and fresh veggies.
