  • 1 lb boneless skinless chicken thighs

  • 1 whole avocado, sliced
  • 1 cup baby cucumbers, sliced
  • 2 stalks spring onions, chopped
  • 3 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp apple vinegar
  • 1 tbsp tomato paste
  • 2 tbsp pineapple juice
  • 1 tbsp sriracha
  • 1 tbsp sesame oil
  • 1 cup cooked edamame beans
  • 1 tbsp toasted sesame seeds
  • 2 tbsp light mayo

Instructions

  1. Cook jasmine rice per package instructions; fluff and set aside.
  2. In a frying pan over medium heat, add sesame oil. Sauté grated garlic and ginger until fragrant.
  3. Add chicken thighs and cook until browned on both sides and fully cooked (about 6-7 minutes per side). Let rest before slicing.
  4. In a mixing bowl, combine soy sauce, maple syrup, apple vinegar, tomato paste, pineapple juice, sriracha, and sesame oil; whisk well.
  5. Assemble bowls starting with jasmine rice as the base; layer with sliced chicken and fresh veggies.
  6. Drizzle generously with sauce and top with toasted sesame seeds.
