  • 8 oz bowtie pasta, cooked to al dente
  • 1 English cucumber, sliced into half moons
  • 10 oz cherry tomatoes, halved
  • 1 green pepper, chopped
  • 1/2 red onion, chopped
  • 5 oz kalamata olives, halved
  • 1/3 cup olive oil
  • 1/3 cup water
  • 3 tbsp red apple vinegar
  • 1/2 lemon, juiced
  • 2 tbsp honey
  • 2 tsp dijon mustard
  • 3 garlic cloves, minced
  • 3 tbsp fresh parsley, chopped
  • 8 oz feta, cubed
  • 1 tbsp fresh dill, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. 1. Boil water in a large pot and add a pinch of salt. Add the bowtie pasta and cook according to package instructions until al dente. Drain the pasta and rinse it under cold water to stop cooking. Set aside.
  2. 2. While the pasta cooks, chop the cucumber, cherry tomatoes, green pepper, red onion, and kalamata olives. Place all chopped vegetables in a large mixing bowl.
  3. 3. In a small bowl, whisk together olive oil, water, red apple vinegar, lemon juice, honey, dijon mustard, minced garlic, salt, and black pepper until well combined.
  4. 4. Add cooked pasta to the bowl with vegetables. Pour dressing over the pasta salad and toss gently until everything is evenly coated.
  5. 5. Gently fold in cubed feta cheese along with fresh parsley and dill. Taste and adjust seasoning if needed before serving.
