- 8 oz bowtie pasta, cooked to al dente
- 1 English cucumber, sliced into half moons
- 10 oz cherry tomatoes, halved
- 1 green pepper, chopped
- 1/2 red onion, chopped
- 5 oz kalamata olives, halved
- 1/3 cup olive oil
- 1/3 cup water
- 3 tbsp red apple vinegar
- 1/2 lemon, juiced
- 2 tbsp honey
- 2 tsp dijon mustard
- 3 garlic cloves, minced
- 3 tbsp fresh parsley, chopped
- 8 oz feta, cubed
- 1 tbsp fresh dill, chopped
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- 1. Boil water in a large pot and add a pinch of salt. Add the bowtie pasta and cook according to package instructions until al dente. Drain the pasta and rinse it under cold water to stop cooking. Set aside.
- 2. While the pasta cooks, chop the cucumber, cherry tomatoes, green pepper, red onion, and kalamata olives. Place all chopped vegetables in a large mixing bowl.
- 3. In a small bowl, whisk together olive oil, water, red apple vinegar, lemon juice, honey, dijon mustard, minced garlic, salt, and black pepper until well combined.
- 4. Add cooked pasta to the bowl with vegetables. Pour dressing over the pasta salad and toss gently until everything is evenly coated.
- 5. Gently fold in cubed feta cheese along with fresh parsley and dill. Taste and adjust seasoning if needed before serving.
