- 1 tablespoon lemon juice
- 1 tablespoon arrowroot starch or cornstarch
- 1–2 tablespoons maple syrup or honey (optional, depending on sweetness of peaches)
- ½ teaspoon cinnamon
- ¾ cup rolled oats
- ½ cup almond flour
- ¼ cup chopped nuts (e.g. almonds or pecans)
- 2 tablespoons coconut oil
- 2 tablespoons maple syrup or honey
- ½ teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
- In a mixing bowl, toss the sliced peaches with lemon juice, arrowroot starch, optional sweetener, and cinnamon. Pour into the baking dish.
- In another bowl, combine rolled oats, almond flour, chopped nuts, cinnamon, and salt. Mix in coconut oil and sweetener until crumbly.
- Sprinkle the oat mixture over the peach filling evenly.
- Bake for 30–35 minutes until golden brown on top and bubbly.
- Allow to cool for about 10 minutes before serving.
