Ingredients

  • Digestive biscuits or oats
  • Soy protein crisps (optional)
  • Light butter
  • Greek yogurt (vanilla or plain)
  • Light cream cheese
  • Eggs
  • Zero-calorie sweetener
  • Raspberries (fresh or frozen)
  • Lemon juice
  • Lemon zest

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. In a food processor, blend digestive biscuits until finely crushed. Combine with melted light butter and mix until crumbly.
  3. Press the mixture into a brownie pan lined with parchment paper and bake for 10 minutes.
  4. In a bowl, mix together light cream cheese, yogurt, eggs, sweetener, protein powder, lemon juice, vanilla, and zest until smooth.
  5. Layer fresh raspberries over the cooled crust and pour half of the cheesecake batter on top. Repeat the layering process.
  6. Bake for 30-40 minutes until set but still slightly jiggly in the center.
