Ingredients
- 2 large eggs
- 1 cup Greek yogurt
- 1/2 cup maple syrup or honey
- 1/4 cup avocado oil or melted coconut oil
- 2 tsp pure vanilla extract
- 1/2 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup quick or rolled oats
- 1 3/4 cups spelt or whole wheat flour (+ 1 tbsp for coating berries)
- 1 1/2 cups strawberries (diced, fresh or frozen)
- 2 tbsp cane or coconut sugar (for sprinkling, optional)
- Zest of 1 lemon (optional)
- Cooking spray (I use Misto)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with parchment paper liners.
- Dice strawberries, reserving 2 tablespoons. Toss remaining strawberries with 1 tablespoon of flour and set aside.
- In a large bowl, whisk together eggs, Greek yogurt, maple syrup, avocado oil, vanilla extract, cinnamon, baking powder, baking soda, and salt.
- Stir in oats and flour until just combined. Gently fold in the coated strawberries.
- Fill muffin tin openings with batter using an ice cream scoop and top with reserved strawberries.
- Bake for about 22 minutes until a toothpick comes out clean.
- Allow to cool for 10 minutes before enjoying.
