- 2 cups shredded zucchini
- 1 large egg
- 1/2 cup unsweetened applesauce
- 3/4 cup honey or maple syrup
- 2 cups whole wheat flour or spelt flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 cup walnuts (coarsely chopped) (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9 x 5 loaf pan with parchment paper and lightly spray it with cooking spray.
- In a large mixing bowl, whisk together the egg, applesauce, honey or maple syrup, cinnamon, baking soda, baking powder, and salt until well combined.
- Stir in the shredded zucchini until incorporated.
- Gently fold in the whole wheat flour or spelt flour using a spatula until just combined.
- Pour the batter into the prepared loaf pan and bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for about 10 minutes in the pan before transferring to a wire rack to cool completely.
