Ingredients

  • 2 cups shredded zucchini
  • 1 large egg
  • 1/2 cup unsweetened applesauce
  • 3/4 cup honey or maple syrup
  • 2 cups whole wheat flour or spelt flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup walnuts (coarsely chopped) (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9 x 5 loaf pan with parchment paper and lightly spray it with cooking spray.
  2. In a large mixing bowl, whisk together the egg, applesauce, honey or maple syrup, cinnamon, baking soda, baking powder, and salt until well combined.
  3. Stir in the shredded zucchini until incorporated.
  4. Gently fold in the whole wheat flour or spelt flour using a spatula until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool for about 10 minutes in the pan before transferring to a wire rack to cool completely.
