  • 1 cup small pasta (ditalini or elbow macaroni)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, diced carrots, and diced celery; sauté for 5–7 minutes until softened.
  2. Stir in minced garlic and cook for an additional minute.
  3. Add vegetable broth, diced tomatoes, rinsed cannellini beans, oregano, and thyme. Bring to a boil.
  4. Stir in the small pasta of your choice and reduce heat to simmer for 10–12 minutes until the pasta is tender but not mushy.
  5. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
