  • 2 cups baby potatoes, halved
  • 1 cup sliced mushrooms (cremini or button)
  • ½ cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken thighs with salt, pepper, thyme, and rosemary.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear chicken skin-side down until golden brown (5-7 minutes), then flip and cook for another 5 minutes. Set aside.
  4. In the same skillet, sauté minced garlic and sliced mushrooms until softened (2-3 minutes). Add halved baby potatoes and stir well.
  5. Pour in chicken broth and heavy cream; mix thoroughly.
  6. Nestle the seared chicken thighs on top of the vegetable mixture.
  7. Bake in the preheated oven for 35-40 minutes until the chicken is cooked through and potatoes are tender.
