  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon salt
  • 1 tablespoon active dry yeast
  • 1 1/4 cups warm milk
  • 2 tablespoons unsalted butter, melted
  • 1 cup unsalted butter, cold (shaped into a flat square)
  • 1 egg
  • 1 tablespoon milk

Instructions

  1. Combine flour, sugar, and salt in a large bowl or stand mixer.
  2. Dissolve yeast in warm milk and let sit until foamy (5 to 10 minutes). Add to dry ingredients along with melted butter; knead until smooth (3–5 minutes). Shape into a rectangle, wrap in plastic, and refrigerate for 1 hour.
  3. Flatten cold butter between parchment paper into a 6-inch square.
  4. Roll dough into a 12-inch square; place butter block diagonally in the center. Fold corners over butter to enclose it fully.
  5. Roll dough into a long rectangle (8×20 inches) and fold into thirds (first turn). Chill for 30 minutes.
  6. Repeat rolling and folding process two more times for a total of three turns.
  7. After final rest, roll out dough to about 1/4 inch thick and cut triangles (5 inches wide at the base).
  8. Starting at the wide end, roll each triangle towards the tip to shape croissants.
  9. Let croissants rise for about 1.5 to 2 hours at room temperature.
  10. Preheat oven to 400°F (200°C). Mix egg with milk; brush over croissants for shine.
  11. Bake for about 18–22 minutes until golden brown.
