Ingredients

  • 450 g chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil
  • Salt & pepper
  • 2 tbsp whole grain mustard
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 red bell pepper, sliced
  • 1 cup baby spinach leaves
  • 1 cup cherry tomatoes
  • 1 tsp olive oil
  • Pinch of salt & pepper
  • 1 cup white rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. Cook rice in salted water until fluffy; set aside.
  2. Toss cherry tomatoes with olive oil, salt, and pepper; roast at 200C (400F) for 10-12 minutes.
  3. Heat olive oil in a non-stick skillet; season chicken with salt and pepper, cooking until golden brown.
  4. Add honey, mustard, soy sauce, and lemon juice to the skillet; cook until the sauce thickens.
  5. Stir in sliced bell peppers and cook for an additional two minutes.
  6. Assemble bowls by placing chicken mixture over fresh spinach and adding roasted cherry tomatoes alongside rice.
