  • 1 package phyllo dough
  • 1 1/2 cups unsalted butter
  • 2 cups shelled pistachios
  • 24 oz cream cheese
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 3/4 cup honey
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 tsp cinnamon (optional)
  • 1 tsp orange blossom water (optional)

Instructions

  1. Prepare the honey syrup by simmering honey, water, sugar, lemon juice, and optional orange blossom water in a saucepan for 10 minutes until thickened. Cool completely.
  2. Preheat your oven to 325°F (165°C) and prepare a springform pan lined with foil.
  3. Layer about 10-12 buttered phyllo sheets at the bottom of the pan, sprinkling chopped pistachios mixed with sugar and cinnamon in between layers.
  4. For the cheesecake filling, beat softened cream cheese until smooth, then mix in sugar, eggs (one at a time), vanilla extract, and sour cream until combined. Pour over phyllo base.
  5. Top with another layer of buttered phyllo sheets, folding edges over to seal.
  6. Bake for 60-70 minutes or until set and golden brown on top. Allow cooling before refrigerating for at least four hours or overnight.
  7. Drizzle cooled honey syrup over the cheesecake and garnish with additional chopped pistachios before serving.
