  • 9 lasagna noodles (oven-ready)
  • 1 lb lean ground beef
  • 2 cups fresh spinach
  • 15 oz ricotta cheese
  • 3 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 3 cups marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet, brown ground beef over medium heat for 5-7 minutes. Drain excess fat and stir in half the marinara sauce; simmer for a few minutes.
  3. In a bowl, mix ricotta cheese, egg, half the Parmesan cheese, salt, and pepper until well combined.
  4. Spread marinara sauce on the bottom of the baking dish. Layer with noodles, beef mixture, ricotta mixture, and spinach; repeat layers twice.
  5. Top with remaining marinara sauce and sprinkle mozzarella and remaining Parmesan on top.
  6. Cover with foil (avoiding contact with cheese) and bake for 25 minutes. Remove foil and bake an additional 15 minutes until bubbly.
