Ingredients
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp pure vanilla extract
- 1 cup fresh strawberries, pureed
- 1 cup fresh raspberries, pureed
- 1/4 cup unsweetened cocoa powder
- 5 tbsp unsalted butter, melted
- 1 cup graham cracker crumbs
- 1 tsp agar-agar powder mixed with 2 tbsp water
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of a springform pan to form the crust.
- In another bowl, beat cream cheese and sugar until smooth. Add vanilla extract and mix well.
- Divide the mixture into three bowls; fold in strawberry puree in one bowl, raspberry puree in another, and cocoa powder in the last bowl.
- Layer mixtures into the springform pan starting with strawberry layer first, followed by raspberry and then chocolate; repeat layers until all mixtures are used.
- Dissolve agar-agar in warm water according to package instructions; gently fold it into each layer before refrigerating for at least four hours or overnight.
- Carefully remove from pan and serve garnished with fresh berries.
