Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1 cup fresh raspberries, pureed
  • 1/4 cup unsweetened cocoa powder
  • 5 tbsp unsalted butter, melted
  • 1 cup graham cracker crumbs
  • 1 tsp agar-agar powder mixed with 2 tbsp water

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of a springform pan to form the crust.
  2. In another bowl, beat cream cheese and sugar until smooth. Add vanilla extract and mix well.
  3. Divide the mixture into three bowls; fold in strawberry puree in one bowl, raspberry puree in another, and cocoa powder in the last bowl.
  4. Layer mixtures into the springform pan starting with strawberry layer first, followed by raspberry and then chocolate; repeat layers until all mixtures are used.
  5. Dissolve agar-agar in warm water according to package instructions; gently fold it into each layer before refrigerating for at least four hours or overnight.
  6. Carefully remove from pan and serve garnished with fresh berries.
