Ingredients
- 1 lb ground beef
- 1 cup plain bread crumbs
- 1/2 cup fresh grated parmesan cheese
- 1 egg
- 1 onion (diced)
- 4 garlic cloves (minced)
- 5–6 cups beef stock
- 14–16 oz gnocchi (homemade or ready-to-use)
- Fresh herbs (parsley, basil, oregano)
Instructions
- In a mixing bowl, combine ground beef, bread crumbs, parmesan cheese, egg, minced onion, garlic cloves, parsley, basil, crushed red pepper flakes, salt, and black pepper. Mix well and form small meatballs.
- Heat olive oil in a large pot over medium heat. Add meatballs in batches and brown on all sides; then remove from the pot.
- In the same pot, sauté diced onion and carrots until onions are translucent. Add diced tomatoes and minced garlic; cook until fragrant.
- Pour in water and beef stock; stir in tomato paste along with salt and red pepper flakes. Bring to a simmer.
- Return browned meatballs to the pot and let cook for about 10 minutes.
- Add gnocchi and cook according to package instructions or until they float.
