  • 1.5 lb oxtail
  • 3 garlic cloves (minced)
  • 2 tsp chicken bouillon
  • 1 tsp allspice
  • ½ red bell pepper (diced)
  • ½ green bell pepper (diced)
  • 2 tomatoes (diced)
  • 16 oz butter beans (rinsed)
  • 1 cup baby carrots
  • 1 medium onion (chopped)
  • 4 tbsp cooking oil
  • 3 cups water

Instructions

  1. Rinse the oxtail with water, lemon, and vinegar; trim excess fat and pat dry.
  2. Marinate the oxtail with minced garlic, spices, and vegetables for at least 30 minutes.
  3. In an instant pot or pressure cooker on sauté mode, sear each side of the oxtail until browned.
  4. Remove the oxtail; sauté onions, bell peppers, and tomatoes until soft.
  5. Return the oxtail to the pot with drippings and add water; pressure cook for 20 minutes.
  6. Release steam naturally; then stir in butter beans and carrots, thicken with cornstarch mixture.
  7. Serve hot with your choice of sides.
