 - 90 ml whole fat milk
 - 20 ml vegetable oil
 - 30 grams granulated sugar (for filling)
 - 1/2 teaspoon cotton candy extract (for batter)
 - 70 grams cake flour
 - 1/4 teaspoon sea salt
 - 1 cup heavy cream, chilled
 - 1 tablespoon + 1 teaspoon granulated sugar (for whipped cream)
 - 1 teaspoon cotton candy extract (for whipped cream)
 - 1 teaspoon unflavored vegan gelatin powder
 - 4 teaspoons water
 
Instructions
- Preheat your oven to 325°F (163°C) and line an 8 X 12" baking pan with parchment paper.
 - Whisk together wet ingredients in one bowl and sift dry ingredients in another.
 - Create the batter by combining wet and dry mixtures carefully.
 - In a separate bowl, whip egg whites until soft peaks form, then fold into the batter gently.
 - Pour the mixture into the prepared pan and bake for 10-12 minutes until the cake springs back when touched.
 - Cool completely before spreading whipped cream filling and rolling up carefully.
