  • 90 ml whole fat milk
  • 20 ml vegetable oil
  • 30 grams granulated sugar (for filling)
  • 1/2 teaspoon cotton candy extract (for batter)
  • 70 grams cake flour
  • 1/4 teaspoon sea salt
  • 1 cup heavy cream, chilled
  • 1 tablespoon + 1 teaspoon granulated sugar (for whipped cream)
  • 1 teaspoon cotton candy extract (for whipped cream)
  • 1 teaspoon unflavored vegan gelatin powder
  • 4 teaspoons water

Instructions

  1. Preheat your oven to 325°F (163°C) and line an 8 X 12" baking pan with parchment paper.
  2. Whisk together wet ingredients in one bowl and sift dry ingredients in another.
  3. Create the batter by combining wet and dry mixtures carefully.
  4. In a separate bowl, whip egg whites until soft peaks form, then fold into the batter gently.
  5. Pour the mixture into the prepared pan and bake for 10-12 minutes until the cake springs back when touched.
  6. Cool completely before spreading whipped cream filling and rolling up carefully.
