  • 1/2 cup pumpkin seeds
  • 6 cups mixed salad greens
  • 2 avocados, sliced
  • 12 apples or pears, diced
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese (blue, feta, or goat cheese)
  • 1/3 cup honey or maple syrup
  • 1/3 cup virgin olive oil
  • 1/4 cup balsamic vinegar or apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper to taste
  • Chili flakes

Instructions

  1. Toast walnuts in a dry skillet over medium heat for about 5 minutes until fragrant; let cool.
  2. Whisk together honey (or maple syrup), olive oil, vinegar, Dijon mustard, fig jam, orange zest and juice in a small bowl; season with salt and pepper.
  3. In a large bowl, combine mixed greens, diced apples or pears, sliced avocados, toasted walnuts, pumpkin seeds, pomegranate seeds, and crumbled cheese.
  4. Drizzle the dressing over the salad and gently toss until evenly coated.
  5. Serve immediately or transfer to individual plates; sprinkle chili flakes on top if desired.
