  • 1/3 cup Almond Flour
  • 1 1/2 cups Beef Rind Chips
  • 2 tsp Garlic Powder
  • 2 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1/2 tsp Oregano
  • 1 Roma Tomato (diced)
  • 2 cups Shredded Lettuce
  • 1/2 cup Mexican Blend Shredded Cheese
  • 1 Avocado
  • 1/3 cup Sour Cream
  • 1 packet Ranch Seasoning

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Flatten chicken breasts between parchment paper for even cooking.
  3. Whisk the egg in a shallow bowl.
  4. Combine beef rind chips, almond flour, and spices on a separate plate.
  5. Dip chicken into egg mixture, then coat with spice blend.
  6. Shape over one side of a tall springform pan on a baking sheet and bake for 25 minutes until golden brown.
  7. Blend avocado, sour cream, and ranch seasoning for a creamy topping.
  8. Assemble by adding ranch avocado cream, lettuce, diced tomato, cheese, and sour cream inside the chalupa shell.
