  • 1 tsp. corn starch
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup cold, unsalted butter, cubed
  • 1/2 cup light brown sugar, packed
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 cups milk chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, corn starch, baking powder, baking soda, and salt. Set aside.
  3. Cream cold cubed butter in a stand mixer until creamy. Gradually add brown sugar and white sugar until light and fluffy. Mix in egg and egg yolk.
  4. Gradually incorporate the dry mixture until just combined. Gently fold in milk chocolate chips.
  5. Scoop dough into tall balls weighing about 5.7 oz each and space them on the baking sheet.
  6. Bake for 10–12 minutes until golden brown but slightly underbaked for optimal gooeyness.
  7. Let cool on the baking sheet for at least 15–30 minutes before transferring to a rack.
