  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus more for garnish)
  • ½ teaspoon salt
  • 1 tablespoon lemon zest
  • 2/3 cup fresh lemon juice (about 45 lemons)
  • 4 large eggs
  • 2 cups granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).

  3. Press the mixture into the bottom of a greased 9×13 inch baking dish and bake for 15 minutes until lightly golden.
