  • 1 cup icing sugar (for glaze)
  • 1/4 cup freshly squeezed lemon juice (for glaze)
  • Milk (as needed, to adjust the consistency of the glaze)

Instructions

  1. Preheat your oven to 350°F. Grease an 8.5×4.5×2.5 inch loaf pan and dust with flour.
  2. In a bowl, sift together flour, baking powder, and salt; set aside.
  3. In another bowl, whisk Greek yogurt, sugar, eggs, lemon zest, vanilla extract, and vegetable oil until smooth.
  4. Gradually add the wet mixture to the dry ingredients until just combined.
  5. Coat blueberries with flour and gently fold them into the batter.
  6. Pour the batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
