  • 1½ cups all-purpose flour

  • 6 tablespoons unsalted butter (melted)
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1/3 cup unsalted butter (room temperature)
  • ¾ cup sugar
  • 2 eggs
  • 2/3 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • Grated zest from 1 lemon
  • 2 tablespoons fresh lemon juice
  • ¾ cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Prepare the lemon curd by whisking egg yolks, sugar, lemon zest, and juice over simmering water until thickened. Stir in cold butter until melted and let cool.
  2. Preheat the oven to 350°F (175°C) and line a muffin pan with liners.
  3. Combine dry ingredients (flour, baking powder, baking soda, salt) in one bowl.
  4. Cream room temperature butter and sugars in another bowl; add eggs, Greek yogurt, lemon zest, and juice.
  5. Mix dry ingredients into wet ingredients until just combined.
  6. Fill muffin liners halfway with batter, add a tablespoon of cooled lemon curd in the center, then top with more batter.
  7. Bake for about 25 minutes until golden brown.
  8. Make the glaze by mixing powdered sugar and milk; drizzle over cooled muffins.
