- 2 tablespoons fresh lemon juice
- ¾ cup powdered sugar
- 1–2 tablespoons milk
Instructions
- Prepare the lemon curd by whisking egg yolks, sugar, lemon zest, and juice over simmering water until thickened. Stir in cold butter until melted and let cool.
- Preheat the oven to 350°F (175°C) and line a muffin pan with liners.
- Combine dry ingredients (flour, baking powder, baking soda, salt) in one bowl.
- Cream room temperature butter and sugars in another bowl; add eggs, Greek yogurt, lemon zest, and juice.
- Mix dry ingredients into wet ingredients until just combined.
- Fill muffin liners halfway with batter, add a tablespoon of cooled lemon curd in the center, then top with more batter.
- Bake for about 25 minutes until golden brown.
- Make the glaze by mixing powdered sugar and milk; drizzle over cooled muffins.
