  • 1 grilled chicken breast, sliced
  • 2 eggs
  • 1 avocado, sliced
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 2 tbsp crumbled feta cheese
  • 2 tbsp Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 1 tsp apple vinegar or lemon juice
  • Salt & black pepper to taste
  • Chopped fresh parsley (optional)

Instructions

  1. Boil the eggs for 7-8 minutes until hard-boiled. Cool in ice water, peel, and quarter.
  2. In a mixing bowl, combine chopped romaine lettuce, diced cucumber, and halved cherry tomatoes.
  3. Assemble the bowl by layering sliced grilled chicken, avocado slices, quartered eggs, crumbled feta cheese, and Kalamata olives on top of the salad base.
  4. Drizzle with extra virgin olive oil and apple vinegar or lemon juice; season with salt and black pepper to taste. Add chopped parsley if desired. Serve immediately.
