  • 1 (15 ounce) can chickpeas (rinsed and drained)
  • 2 mini cucumbers (chopped)
  • 1 tablespoon red onion (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 red bell pepper (chopped)
  • 1 cup little tomatoes (halved)
  • 1/2 cup Kalamata olives
  • 3.5 ounces feta cheese
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic (minced)
  • Salt & pepper to taste

Instructions

  1. Start by draining and rinsing the chickpeas thoroughly. Place them in a mixing bowl.
  2. Chop the cucumbers, red onion, bell pepper, and tomatoes into small pieces and add them to the bowl.
  3. Finely chop the fresh oregano and parsley, then add them along with the Kalamata olives.
  4. In a separate small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper until well combined.
  5. Pour the dressing over the salad ingredients in the mixing bowl and toss gently to combine. Adjust seasoning as needed before serving.
