Ingredients
- 2 boneless chicken breasts
- 1 tbsp olive oil
- Juice of lemon
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt & pepper to taste
- 1 cup cooked basmati rice
- 1 cucumber, sliced
- 1 cup canned chickpeas, rinsed & drained
- 1 cup Kalamata olives
- Fresh dill for garnish
- 1 cup Greek yogurt
- Cucumber, grated & squeezed
- 1 garlic clove, minced
- 1 tbsp fresh dill, chopped
- 1 tsp lemon juice
- Salt & pepper to taste
- Optional: pinch of chili flakes
Instructions
- Marinate the chicken by combining olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Coat the chicken breasts and let sit while preparing other ingredients.
- Grill the marinated chicken over medium heat for 5-6 minutes per side until cooked through (internal temperature should reach 165°F). Allow to rest before slicing.
- Prepare tzatziki by mixing Greek yogurt with grated cucumber (squeezed), minced garlic, chopped dill, lemon juice, salt, and pepper.
- Assemble the bowl starting with a base of cooked basmati rice. Layer with chickpeas, sliced cucumber, olives, sliced grilled chicken, and tzatziki. Garnish with fresh dill.
