Ingredients
- 2 lb salmon filet
 - 1 Tbsp avocado oil
 - ½ red onion (finely chopped)
 - 1 jar sun-dried tomatoes (drained and chopped)
 - 5 ounces baby spinach
 - 6 ounces feta cheese crumbles
 - Optional: ⅓ cup pesto sauce
 
Instructions
- Preheat oven to 400°F.
 - Place salmon on a parchment-lined baking sheet. Brush with avocado oil and season with sea salt and garlic powder.
 - Bake for 10 minutes.
 - In a skillet over medium heat, sauté onions in avocado oil until soft (5–8 minutes).
 - Add sun-dried tomatoes and spinach; cook until spinach wilts.
 - Stir in feta cheese until slightly melted.
 - Top salmon with the vegetable mixture; return to oven for another 8–10 minutes or until internal temperature reaches 145°F.
