  • 2 lb salmon filet
  • 1 Tbsp avocado oil
  • ½ red onion (finely chopped)
  • 1 jar sun-dried tomatoes (drained and chopped)
  • 5 ounces baby spinach
  • 6 ounces feta cheese crumbles
  • Optional: ⅓ cup pesto sauce

Instructions

  1. Preheat oven to 400°F.
  2. Place salmon on a parchment-lined baking sheet. Brush with avocado oil and season with sea salt and garlic powder.
  3. Bake for 10 minutes.
  4. In a skillet over medium heat, sauté onions in avocado oil until soft (5–8 minutes).

  6. Stir in feta cheese until slightly melted.
  7. Top salmon with the vegetable mixture; return to oven for another 8–10 minutes or until internal temperature reaches 145°F.
