- 8 small boneless chicken thighs, any visible fat removed
- 2 cloves of garlic
- 1 jalapeño pepper, seeds removed
- 3 tablespoons of tomato paste
- 2 teaspoons of cumin
- 2 teaspoons of paprika
- 1/2 teaspoon of oregano
- handful of fresh coriander
- juice of half a lime
- salt and black pepper
- 1 red bell pepper, chopped into square pieces
- 1 green bell pepper, chopped into square pieces
- 1 yellow bell pepper, chopped into square pieces
- 1 white onion, chopped into square pieces
- cooking oil spray
Instructions
- In a mini food processor, blend garlic, jalapeño, tomato paste, cumin, paprika, oregano, coriander, lime juice, salt, and pepper until smooth.
- Dice the chicken thighs and coat them in the marinade. Cover and refrigerate for at least 2 hours or overnight.
- Soak wooden skewers in water for 30 minutes (if using). Thread marinated chicken and veggies onto skewers alternately.
- Preheat grill or oven to high heat. Cook skewers for about 15 minutes on the grill or bake at 220°C (425°F) for 25-30 minutes, turning occasionally.
