  • 1 large spaghetti squash
  • 1/2 lb lean ground beef
  • 24 oz marinara sauce
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper

Instructions

  1. Preheat your oven to 400°F. Cut the spaghetti squash in half lengthwise, remove seeds, and place in a baking dish.
  2. Bake for 50-60 minutes until fork-tender. Let cool for 10 minutes before shredding with a fork.
  3. In a medium skillet over medium heat, cook the ground beef until browned (7-10 minutes). Drain excess grease, add marinara sauce, and simmer for 2-3 minutes. Season as desired.
  4. In a mixing bowl, combine ricotta cheese, Italian seasoning, salt, pepper, Parmesan cheese, and 1 cup mozzarella.
  5. Pour half of the marinara over the shredded squash; mix well. Spread the ricotta mixture on top and layer with remaining marinara and mozzarella.
  6. Bake for another 10-20 minutes until cheese is melted and bubbly.
