  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for swirl)
  • 1 tablespoon cinnamon (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 loaf pan with parchment paper.
  2. In a large bowl, combine shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract. Mix well.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually add this mixture to the wet ingredients and stir gently until just combined.
  4. In a small bowl, mix granulated sugar with cinnamon for the swirl.
  5. Pour half of the batter into the prepared pan, sprinkle half of the cinnamon sugar on top, then add remaining batter and finish with the rest of the swirl mixture.
  6. Use a knife to create a swirl effect in the batter.
  7. Bake for about 60–65 minutes or until golden brown and a toothpick comes out clean.
  8. Allow cooling in the pan for 10–15 minutes before transferring to a wire rack.
