- 1 lb (680g) lamb shoulder or stew meat, cut into chunks
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 1 (15 oz) can chickpeas, drained and rinsed
- 3 large carrots, peeled and chopped
- 2 small zucchinis, sliced into half-moons
- 1/2 cup prunes, chopped
Instructions
- Heat olive oil in a heavy-bottomed pot over medium heat. Add lamb chunks and sear until browned on all sides (about 5-7 minutes).
- Stir in chopped onion, minced garlic, and grated ginger; sauté for another 3-4 minutes until the onion softens.
