Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 lb (680g) lamb shoulder or stew meat, cut into chunks
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 3 large carrots, peeled and chopped
  • 2 small zucchinis, sliced into half-moons
  • 1/2 cup prunes, chopped

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat. Add lamb chunks and sear until browned on all sides (about 5-7 minutes).
  2. Stir in chopped onion, minced garlic, and grated ginger; sauté for another 3-4 minutes until the onion softens.
  3. Add ground turmeric, cinnamon, cumin, smoked paprika, salt, and pepper to coat the meat evenly with spices.
  4. Incorporate chickpeas, carrots, zucchinis, and chopped prunes; mix gently to combine.
  5. Cover the pot and reduce heat to low. Simmer for approximately 45-60 minutes until the lamb is tender.
  6. Serve hot over rice or couscous.
