  • 6 cups fresh baby spinach
  • 1 cup crumbled feta cheese

  • 1/4 cup red onion, finely diced
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook the whole wheat pasta according to package directions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper.
