  • 1 and 1/2 cups packed brown sugar

  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 1 cup old-fashioned rolled oats
  • 1 and 1/4 cups old-fashioned rolled oats (blended into flour)
  • 2 and 1/2 cups semisweet chocolate chips

Instructions

  1. Preheat your oven to 325°F and line two baking sheets with parchment paper.
  2. In a mixing bowl or stand mixer, beat the softened butter until creamy. Add in brown sugar and mix until fluffy. Incorporate eggs and vanilla extract one at a time.
  3. In the same bowl, add flour, baking soda, baking powder, and salt without mixing just yet. Then stir in whole oats.
  4. Blend additional oats into a coarse flour using a blender or food processor; add to the dough.
  5. Mix until just combined and fold in the chocolate chips.
  6. Scoop dough into balls on prepared sheets, spacing them apart.
  7. Bake for about 9–10 minutes until edges are firm but centers are shiny.
  8. Let cool slightly before transferring to a wire rack.
