  • 46 tablespoons water
  • 2 tablespoons salted butter
  • 2 cups yellow onion (chopped)
  • 1½ cups carrot (diced)
  • 1 cup celery (diced)
  • 4 teaspoons garlic (minced)
  • 3 red potatoes (peeled and diced)
  • 2 cups beef stock
  • 2 teaspoons soy sauce (as Worcestershire substitute)
  • 1¼ teaspoon English mustard (such as Colman's)
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons fresh parsley (finely chopped)

Instructions

  1. Make the pastry dough by mixing flour and salt, rubbing in chilled butter and lard until crumbly. Add vinegar and water to form a dough, then refrigerate.
  2. Prepare the filling by sautéing onions, carrots, celery, and garlic in salted butter until softened. Stir in diced potatoes and crumbled beef along with stock, soy sauce, mustard, black pepper, and parsley.
  3. Preheat your oven to 375°F (190°C). Roll out the pastry, fit half into a pie dish, fill with the meat mixture, cover with remaining pastry, and seal edges.
  4. Bake for approximately 75 minutes until golden brown. Let cool before serving.
