  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans kidney beans, drained and rinsed
  • 1 can great northern beans, drained and rinsed
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups beef broth
  • 1 cup carrots, diced
  • 2 celery stalks, chopped
  • 1 ½ cups uncooked small pasta (like ditalini)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat and transfer to a slow cooker.
  2. Add chopped onion, garlic, carrots, celery, kidney beans, and great northern beans to the slow cooker.
  3. Pour in beef broth and diced tomatoes with juices. Sprinkle with dried herbs and seasonings; mix well.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. About 30 minutes before serving, stir in uncooked pasta.
  6. Once pasta is tender, adjust seasonings as needed before serving.
