  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract

  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch cake tin.
  2. In a mixing bowl, combine flour, baking powder, ground cardamom, and salt.
  3. In another bowl, cream together softened butter and light brown sugar until fluffy. Add eggs, vanilla extract, orange zest, and fresh orange juice; mix until smooth.
  4. Fold in chopped dates gently.
  5. Gradually incorporate dry ingredients into the wet mixture using a rubber spatula until just combined.
  6. Pour batter into the prepared tin and bake for 40–45 minutes or until a toothpick comes out clean.
  7. For the honey drizzle, heat honey and fresh orange juice in a saucepan over low heat until blended.
  8. Drizzle warm honey mixture over the baked cake while still warm. Allow cooling before slicing.
