  • 1 tablespoon fresh orange zest
  • 1/4 cup fresh orange juice
  • 1/2 cup orange preserves
  • For the Crumble Topping: 1/4 cup all-purpose flour, 2 tablespoons granulated sugar, 2 tablespoons cold unsalted butter
  • For the Cream Cheese Glaze: 2 ounces cream cheese, softened, 1 cup powdered sugar, 1 to 2 tablespoons milk, 1/2 teaspoon vanilla extract
  • For the Orange Drizzle: 1/4 cup powdered sugar, 1 to 2 tablespoons fresh orange juice

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a small bowl, mix together flour and sugar for the crumble; cut in cold butter until coarse crumbs form. Set aside.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk egg, milk, oil, zest, and juice; combine with dry ingredients until just mixed.
  4. Fill muffin cups halfway with batter, add a teaspoon of orange preserves in the center, then top with remaining batter.
  5. Sprinkle crumble on top and bake for 18 to 22 minutes until golden brown.
  6. Let cool before applying cream cheese glaze made by mixing softened cream cheese with powdered sugar and milk.
