  • 4 chicken drumsticks
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 ½ cups uncooked rice
  • 1 ½ cups chicken stock
  • 1 ¼ cups water
  • Butter and spices (paprika, thyme, garlic powder, onion powder, salt, pepper)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spread chopped onion in a baking dish and top with butter pieces. Bake for 15 minutes until onions are browned.
  3. While onions bake, mix spices (thyme, garlic powder, paprika, onion powder, salt, black pepper) in a bowl and rub onto chicken.
  4. Layer uncooked rice over the baked onions and pour in chicken stock and water. Add minced garlic and stir gently.
  5. Place seasoned chicken on top of rice mixture. Cover tightly with foil.
  6. Bake covered for about 30 minutes; then uncover, spray oil on chicken, and bake for an additional 15 minutes until golden brown.
