- 4 chicken drumsticks
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 ½ cups uncooked rice
- 1 ½ cups chicken stock
- 1 ¼ cups water
- Butter and spices (paprika, thyme, garlic powder, onion powder, salt, pepper)
Instructions
- Preheat the oven to 350°F (175°C).
- Spread chopped onion in a baking dish and top with butter pieces. Bake for 15 minutes until onions are browned.
- While onions bake, mix spices (thyme, garlic powder, paprika, onion powder, salt, black pepper) in a bowl and rub onto chicken.
- Layer uncooked rice over the baked onions and pour in chicken stock and water. Add minced garlic and stir gently.
- Place seasoned chicken on top of rice mixture. Cover tightly with foil.
- Bake covered for about 30 minutes; then uncover, spray oil on chicken, and bake for an additional 15 minutes until golden brown.
