  • 1 white fish fillet (tilapia, cod, or sole)
  • 1 cup baby potatoes or Yukon gold, cubed
  • 1 ripe avocado
  • 1 tsp olive oil or butter
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp smoked paprika
  • 1 tbsp chopped tomato
  • 1 tbsp chopped red onion or green onion
  • Lime juice, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Toss the cubed potatoes in olive oil, smoked paprika, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes until golden brown.
  2. Season the fish fillet with salt, pepper, garlic powder, and paprika. Heat a non-stick skillet over medium-high heat with a little olive oil or butter. Cook the fish for about 3-4 minutes per side until lightly crisped and cooked through.
  3. In a mixing bowl, mash the avocado and combine it with chopped tomatoes, onions, lime juice, and salt to make guacamole.
  4. Plate the pan-seared fish alongside the roasted potatoes and add a generous scoop of guacamole on top.
