- 1 cup baby potatoes or Yukon gold, cubed
- 1 ripe avocado
- 1 tsp olive oil or butter
- 1 tbsp olive oil

- 1 tbsp chopped tomato
- 1 tbsp chopped red onion or green onion
- Lime juice, to taste
Instructions
- Preheat your oven to 425°F (220°C). Toss the cubed potatoes in olive oil, smoked paprika, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes until golden brown.
- Season the fish fillet with salt, pepper, garlic powder, and paprika. Heat a non-stick skillet over medium-high heat with a little olive oil or butter. Cook the fish for about 3-4 minutes per side until lightly crisped and cooked through.
- In a mixing bowl, mash the avocado and combine it with chopped tomatoes, onions, lime juice, and salt to make guacamole.
- Plate the pan-seared fish alongside the roasted potatoes and add a generous scoop of guacamole on top.
