  • 1 tsp olive oil
  • 1 tsp dried parsley
  • Salt & freshly ground pepper

Instructions

  1. Boil baby potatoes in salted water until tender (10-12 minutes), then drain and toss with olive oil, dried parsley, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat. Season fish fillets with salt and pepper, then sear for 3-4 minutes per side until golden brown.
  3. In a bowl, combine mixed greens, cucumber, carrots, and red onion. Drizzle with olive oil and lemon juice; season lightly with salt and toss gently.
