  • 115 g unsalted butter, softened
  • 2 large eggs
  • 1 tablespoon freshly grated lemon zest
  • 60 ml freshly squeezed lemon juice
  • 190 g all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 120 ml whole milk
  • 120 g powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 175°C and prepare a 23 cm round cake pan by greasing and lining it with parchment paper.
  2. In a large mixing bowl, beat together the softened butter and granulated sugar until pale and fluffy.
  3. Add eggs one at a time, mixing until creamy after each addition.
  4. Stir in the lemon zest and juice until well combined.
  5. Add flour, baking powder, and salt; mix gently until just combined.
  6. Pour in the milk and stir until smooth.
  7. Transfer the batter to the prepared cake pan and bake for 30–35 minutes or until a skewer comes out clean.
  8. For the glaze, whisk together powdered sugar and lemon juice until smooth while the cake bakes.
  9. Let the cake cool for 10 minutes before transferring to a wire rack; drizzle with glaze before serving.
