  • unbaked pie crust
  • 10 ounces peanut butter chips
  • 1 (14-ounce) can sweetened condensed milk
  • 3 tablespoons salted butter
  • 2 cups miniature vegan marshmallows
  • 1 1/2 cups dry roasted unsalted peanuts
  • 1/2 cup granulated sugar
  • 3 tablespoons salted butter (cubed)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat oven to 400°F. Roll out the pie crust, transfer it to a pie plate, and crimp edges. Prick with a fork.
  2. Line with parchment paper and fill with weights; bake for 15 minutes. Remove weights and bake for another 15 minutes until golden.
  3. In a saucepan over medium heat, melt peanut butter chips, sweetened condensed milk, and butter together.
  4. Stir in vegan marshmallows until fully melted.
  5. Pour the filling into the baked crust and sprinkle roasted peanuts on top.
  6. For the caramel: Cook sugar in a saucepan until melted and amber-colored; add cubed butter and stir until melted.
  7. Combine cream into caramel mixture and simmer for 1 minute; then stir in vanilla and salt. Cool slightly before drizzling over the pie.
  8. Refrigerate for at least four hours before serving.
