  • 2 large cooked chicken breasts (shredded)
  • 3 ribs of celery (chopped)
  • 1/2 cup green onion (chopped)
  • 1/2 cup sweet red bell pepper (chopped)
  • 1 ripe peach for dressing (peeled and quartered)
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 tablespoon fresh basil (chopped)
  • 2 1/2 tablespoons vinegar
  • Salt and pepper to taste
  • 1/3 cup mayonnaise

Instructions

  1. In a mixing bowl, combine the shredded chicken, cubed peaches, chopped celery, green onion, and sweet red bell pepper. Set aside.
  2. In a food processor or blender, blend the dressing ingredients: quartered peach, lemon juice, olive oil, chopped basil, vinegar, salt, sugar, ground pepper, and mayonnaise until smooth.
