  • 4 to 4 1/2 lbs ripe peaches (about 1418 medium)
  • ½ cup water
  • 4 cups granulated sugar

Instructions

  1. Prepare the peaches by rinsing them under cool water and blanching them in boiling water for 30-60 seconds. Transfer to cold water, then peel and cut into quarters.
  2. In a large saucepan, combine the peach pieces with ½ cup of water and simmer over medium heat until soft.
  3. Blend the cooked peaches into a smooth pulp using a food processor or immersion blender.
  4. Add 4 cups of sugar to the pulp in the saucepan, stirring until dissolved. Bring to a soft boil.
  5. Reduce heat and simmer, stirring frequently until thickened enough to mound on a spoon.
  6. Ladle into jars with proper headspace for canning or store in the refrigerator.
