  • ¼ teaspoon sea salt
  • ½ cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • 3 Tablespoons all-purpose flour
  • 1 ½ cup peach puree (about 3 medium peaches)
  • Homemade whipped cream (for topping)
  • ¼ cup granulated sugar (for topping)
  • ¼ cup water (for topping)
  • 1 cup peach puree (for topping)
  • 1 ½ cups peaches (peeled and sliced, for topping)
  • 1 Tablespoon cornstarch (for topping)
  • ½ teaspoon pure vanilla extract (for topping)

Instructions

  1. Prepare a 9” springform pan by buttering and flouring the sides.
  2. In a bowl, mix graham cracker crumbs, sugar, and cinnamon; stir in melted butter. Press into the pan.
  3. Preheat oven to 350°F (175°C).
  4. Beat cream cheese and sugar in a bowl until smooth; add vanilla, sour cream, salt, and eggs one at a time.
  5. Fold in flour and peach puree until combined. Pour over crust.
  6. Bake for about 60 minutes or until set but slightly jiggly in the center.
  7. Let cool in the oven before transferring to cool completely.
