- ¾ cup granulated sugar
- 1 teaspoon pure vanilla extract
- ¼ teaspoon sea salt
- ½ cup sour cream (room temperature)
- 3 large eggs (room temperature)
- 3 Tablespoons all-purpose flour
- 1 ½ cup peach puree (about 3 medium peaches)
- Homemade whipped cream (for topping)
- ¼ cup granulated sugar (for topping)
- ¼ cup water (for topping)
- 1 cup peach puree (for topping)
- 1 ½ cups peaches (peeled and sliced, for topping)
- 1 Tablespoon cornstarch (for topping)
- ½ teaspoon pure vanilla extract (for topping)
Instructions
- Prepare a 9” springform pan by buttering and flouring the sides.
- In a bowl, mix graham cracker crumbs, sugar, and cinnamon; stir in melted butter. Press into the pan.
- Preheat oven to 350°F (175°C).
- Beat cream cheese and sugar in a bowl until smooth; add vanilla, sour cream, salt, and eggs one at a time.
- Fold in flour and peach puree until combined. Pour over crust.
