  • 6 large eggs
  • 3 cups plus 1 tablespoon all-purpose flour, divided

  • 1 teaspoon kosher salt, divided
  • 1 teaspoon baking powder
  • 2 cups (10 ounces) frozen sliced peaches
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup peach preserves
  • 1 tablespoon vanilla extract
  • 1/2 cup powdered sugar
  • 2 teaspoons water
  • 1/8 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 325°F (162°C) and grease a bundt pan with butter.
  2. In a large bowl, cream together butter and cream cheese until smooth. Gradually add granulated sugar and mix until fluffy. Beat in eggs one at a time.
  3. Mix in flour, baking powder, salt, and vanilla extract until combined. Gently fold in frozen peaches.
  4. Prepare the cobbler topping by mixing light brown sugar, ground cinnamon, and reserved flour in another bowl. Sprinkle over the batter in the bundt pan.
  5. Pour remaining batter on top and bake for 65–70 minutes or until a toothpick comes out clean.
  6. Let cool for 15 minutes before transferring to a wire rack. For glaze, mix powdered sugar with water and cinnamon; drizzle over cooled cake.
